Menu for Week of Sept. 25

Sorry for not posting at 10am like we usually (as if we’ve been doing this for a long time!) we were out of town so we couldn’t go to Campbell’s Farmers Market this morning. However, we were able to harvest some delicious veggies from my Mom’s garden and stopped by Sun Smile Farms to pick up the rest of what we will need. This weekend seemed to be the first weekend of Autumn, which means some new vegetables are out! Boy & I have a few evening events going on this week, which made planning dinner a little more tricky- but I think it will be a delicious week!

Monday – Tomato Bruschetta with Mozzarella and Basil (on toasted homemade baguette…!)
We’re going to go see one of our favorite bands in San Francisco this evening so we needed something quick and easy to prepare/eat, and most of this can be prepared in the morning.

Tuesday – Spaghetti Squash Spaghetti with an Eggplant-Zucchini-Banana Pepper-Onion-Tomato Sauce
…I think we’ll be getting our fiber in today!

Wednesday – Spinach Pear and Green Bean Salad (via Epicurious)
Something quick to prepare/eat was a must since we’re heading up to San Francisco to meet up with some amazing old co-workers. We wanted it to be light, since the brewery we’re meeting at also has some tapas that we might munch on… oh, and some beer.

Thursday – Bacon wrapped Chicken and Acorn Squash

Friday – Homemade Pasta?
Our roommate (Boy’s brother) is graciously making dinner for us all, so we’ll see what he comes up with!

Saturday Morning Brunch – Egg Scramble: Bell Pepper, Jalapeño Pepper, Potatoes, Sausage…
We’re going to Octoberfest in San Francisco this afternoon… a solid breakfast should do us good!
